Hummingbird

Tuesday evening was spent baking, which I haven't done in ages. 
I had forgotten how much I love turning on the radio and just getting lost in a mountain of flour and icing.
Although, my baking drought really showed - I attempted to follow a red velvet cupcake recipe from The Hummingbird Bakery, however they came out more as a chocolate sponge rather than being shocking red.
They tasted nice anyway, so I suppose it doesn't matter. 
I topped the sponge with a vanilla buttercream which I turned a very pale shade of pink.







Anyone tried any new cake recipes lately?

Spring Chicken

I have a feeling that this post could be quite rambly... I'm in one of those moods.
FINALLY I have almost finished all my essays for this term... So I've decided to take it easy for the next couple of days which is really lovely.

Yesterday we had our friends Jezza, Zach and DaveyP over and there was lots of cake. It was the first time I made blueberry muffins and they actually turned out ok - maybe too many blueberries but that is fine. It was nice to just chill out and chat with the guys too..
Mazo and I also introduced DaveyP to chat roulette which was amusing!

I'm also really happy that spring is here. I was actually TOO warm earlier and apparently tomorrow is meant to be 18 degrees. WOW! I now long for the summer even more.
This good weather now doesn't give me an excuse not to cycle. I have spent the winter months putting it off because it is too cold or wet. Should be pretty tomorrow - I'm visiting South Kensington (near Harrods) and I don't go there often so it should be really beautiful around the parks!

Red Velvet!



The squirrel which is currently living in the tree outside our house. I love them.

Mazo and I love scotch eggs - she likes hers with mayo, I like mine with ketchup.



I have a lovely new DAB radio (thanks to the bf) and so we decided to go back to the war era of gathering around the wireless over dinner..just with laptops as well.

Five crispy pancakes in a frying pan

Yesterday was pancake day - this always seems to creep up!
We went to our friend Dave's house to make pancakes - they were delicious.
The experience of sieving flour through a colander due to a lack of sieve was interesting!
 I have now rekindled my love of blueberries and we had a variety of toppings like bacon, lemon, syrup, chocolate.
It was nice to spend the day with such good friends. 
In other news - I made my first ever batch of red velvet cupcake this week. I was pleasantly surprised. They will be made again.

I put on my shoes and I'm ready for the weekend

I left London for 5 days this week to spend time at home - the joy of not having any lectures.
It was really great to just have some down-time in a place which is so much quieter than the fast pace of London. It was also really good to see the fam and my dog - I miss her so much! It was also a surprise for my sister - she was shocked when I picked her up at school!
The weather was also beautiful - spring is coming!! Now I can't wait until the summertime.
I had a lovely Chinese meal on Saturday evening and then this afternoon I made some coffee cupcakes from a new recipe book.

Nothing is real and nothing to get hung about. Strawberry Fields forever.

This week is super busy which may mean that there may be a lack of market visiting this week.
But I have eggs to use up after a fridge situation this weekend so what better way to use them than to make cupcakes..

I think I'm going to try this recipe of Strawberry filled cupcakes. They look amazing.
